Gluten Free Snack Mix
1 cup Kay's Naturals Cold Cereal
1 cup Kay's Naturals Cinnamon Toast Pretzels (or try Original)
1/2 cup maple syrup
1/4 cup butter
1/4 cup shredded coconut
1/2 cup chopped pecans, Brazil nuts, cashews, and/or walnuts
1/3 cup hulled pumpkin seeds or sunflower seeds
In a small pan, heat syrup and butter; stir and cook until butter is melted.
Preheat oven to 375 degrees. In a medium-sized baking dish, combine cereal, pretzels, coconut, nuts and seeds. Pack down to form a consistent layer. Pour syrup/butter evenly over mixture.
Allow snack mix to bake for 25 minutes or until golden brown, stirring occasionally. Store the finished snack at room temperature in an airtight container.
Makes approximately 16 servings
