Lemon Cheesecake

3 Crispy Lemon Bars
1 packet Lemonade Fruit Drink
1 packet Cheesecake Shake & Pudding

2 packets diet sweetener
2 cups low-fat cottage cheese
4 drops yellow food coloring

1. Crush the lemon bars with a rolling pin or mallet. Mix in 1 packet of sweetener.
2. Heat in microwave for 10-15 seconds.
3. Pour into the bottom of a pie plate sprayed with no-stick cooking spray, reserving small amount for topping.
4. Mix all other ingredients in blender until creamy.
5. Pour mixture over crust and sprinkle with the reserved topping crumbs.
6. Refrigerate until set, approximately 1 hour.
