Microwave ovens vary; adjust times as needed. In a large, microwave-safe bowl, stir in contents with 1 cup (8 oz) of cold water. Microwave uncovered on high for 3 minutes, remove and stir. Place back in microwave and cook an additional 4-5 minutes. Stir and let stand 1 minute, allowing the meal to cool and thicken.
Total cooking time: 7-8 minutes.
Serving Suggestion: Top with shredded lettuce, tomato and a dallop of low-fat sour cream. Wrap in a whole grain tortilla and enjoy!
